Bai Mu Dan, sometimes called Pai Mu Tan or White Peony, is the quintessential white tea. A fine pick—the top three leaves—of tea that is simply plucked, withered, then packaged. Essentially no processing goes into producing this type of tea, so it could be said it is one of the purest teas around. There is an expression in the Chinese tea world that says “fresh picked white tea is trash, aged white tea is treasure.” Rest assured, our Bai Mu Dan is aged and indeed a treasure among teas.
